Ingredients:
3 - 4 ripe peaches, sliced
8 - 10 cherries, pitted & sliced
8 - 10 candy tomatoes, sliced
2 balls of Garofalo Buffalo Burrata
4 cups of mixed greens such as arugula and microgreens
Handful chopped pistachios
Extra virgin olive oil
Steps:
1. On a large serving platter or in a salad bowl, arrange the mixed greens.
2. Arrange the peach slices, cherries and tomatoes evenly over the greens.
3. Place one burrata ball at the top and tear the second into pieces and scatter them over the salad.
4. Garnish with chopped pistachios and drizzle with extra virgin olive oil.
5. Serve immediately
Pre - cooking tips:
Burrata is best served at room temperature, so take it out of the refrigerator about 30 minutes before assembling the salad.
