Ingredients
Wet Ingredients:
3/4 cup brown sugar
1/4 cup caster sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1/2 cup unsalted butter, room temperature
1 cup dark chocolate chips
Dry Ingredients:
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsweetened cocoa powder
Wet Ingredients: Preheat your oven to 175°C and line a baking sheet with parchment paper. In a heat proof bowl, place the dark chocolate and butter together and melt in the microwave in short bursts of 15 seconds each until smooth and melted. Set aside to cool. In a mixing bowl whisk the brown & caster sugar, eggs and vanilla extract till light and fluffy.
Dry Ingredients: Gently sift in the dry ingredients into the mixing bowl and fold slowly to incorporate. Using a cookie scoop, drop batter onto the baking tray, leaving 2 - 3 inches of space in-between as the cookies will spread as they bake.
Bake: Bake cookies for 12 - 14 minutes till just set, sprinkle with sea salt and allow to cool completely. Enjoy!
