Ingredients:
Ramen:
1 packet preferred choice of ramen
1 large egg
1 tablespoon kewpie mayo
Chicken broth
To serve:
Seaweed tempura
Soft boiled eggs
Truffle chilli crisp
Grilled mushrooms of choice (refer to precooking tips)
Sliced scallion
Ramen: Cook the ramen noodles in chicken broth and set aside.
Sauce: In a separate bowl, whisk together an egg, mayo and the powder and vegetables from the ramen till smooth.
To serve: Whilst the ramen is still hot, pour the whisked egg into the hot ramen whilst whisking to create a rich broth.
Top with mushrooms, tempura seaweed, jammy eggs and a generous drizzle of truffle chilli crisp. Garnish with sliced scallion and enjoy!
Precooking tips:
Shiitake and enoki mushrooms taste incredible with this recipe. Simply sauté a packet of each in 1 tablespoon of sesame oil and soy till golden brown and crispy.
