Hearty, wholesome and just plain delicious: this wholesome, healthy seafood stew takes just 10 minutes to prepare. Allergy information: shellfish SERVES 4 *Item not included in box Prep time: 10 minutes Cook time: 45 minutes Store cupboard ingredients required: olive oil • 2 tbsp olive oil • 250g vine cherry tomatoes • 1 brown onion, diced • 3 cloves garlic, finely sliced • *1 tbsp Seven Spice • 500g squid rings, defrosted • 300ml tomato and herb stock (from a cube) • 340g tomato pulp (from a jar) • 200g quinoa, rinsed • 2 tbsp parsley leaves, chopped • Juice and zest of 1 lemon 1. Place a frying pan over a high heat. Toss the cherry tomatoes in half the olive oil and add to the pan. Cook for 3-4 minutes until soft and blistered, then remove from the pan and set aside. 2. Turn the heat down to medium and add the rest of the olive oil and the onions. Sauté for 4-5 minutes, until soft and translucent. Add the garlic and cook for a further 2 minutes. Stir through the seven spice. Season. 3. Mix ¼ tomato and herb stock cube with 300ml boiling water. Add the squid rings, tomato stock and tomato pulp to the pan and bring to a gentle simmer. Cook uncovered for 15 minutes. 4. Add the quinoa and cover the pan with foil. Cook for a further 15 minutes. Stir through the lemon juice and tomatoes. 5. Spoon into serving bowls and top with the chopped parsley and lemon.
